85-year old Mission, Sevillano, Ascolano and Manzanillo olive trees are harvested early in the season when the olives have the maximum aroma and minimum acidity. The olive varietals are hand picked and pressed separately under traditional granite millstones. During processing the oil is never heated above 80 degrees to keep it a delicious raw food. The oil is carefully hand blended to produce a distinctive unfiltered oil that is fruity and full-bodied with a hint of fresh cut grass and artichoke and a peppery finish.
